Satisfactory cakes result provided that mono and diglycerides of fat forming fatty acids and ethoxylated sorbitan monostearates are used in the presence of a single stage non-nucleating leavening agent, such as sodium aluminum phosphate, in addition to regularly included cake ingredients.
