Abstract:
Antioxidant compositions, useful for preventing deterioration of oils and fats in food products, are prepared by a two-stage extraction from rosemary or sage. A crude product is first extracted from the plant material with a low-boiling solvent separable by evaporation, and is then found to be separable from contaminants that cause objectionable taste or odor, by vacuum steam or molecular distillation, with the antioxidant in a suitable oil carrier, and with the contaminants removed in vapor state. A special purification of the extract, for a product of very high purity except for some flavor or odor for which distillation may be needed, is attainable by chromatography, wherein the antioxidant material favors solvents of greater polarity than solvents in which other materials are eluted. The new antioxidant compositions are not only widely useful but appear to have unusual value in respect to vegetable oils and in respect to oils used in deep frying, and also are found of special value for inhibiting certain flavor and odor effects that occur in soybean oil.

Abstract:
A butter flavoring composition is prepared by fermenting a sweet-whey medium. The sweet-whey medium comprises water, sweet-whey solids, a biosynthesis-precursor-compound fortifier, and a fatty-compound enriching agent. The sweet-whey medium is pasteurized and then innoculated with a microorganism culture comprising the microorganism Leuconostoc cremoris. The innoculated medium is then incubated in a controlled temperature range with agitation and aeration to produce a fermented composition suitable for use as a butter flavoring.
Parenterally administrable oil-in-water emulsions formed from nutritive oils, such as soybean and sunflower oils, are improved first by treating the nutritive oil with silicic acid to remove undesirable components such as peroxides, pigments, thermal and oxidative decomposition products, certain unsaponifiable matter such as sterols, and polymers. Purification is effected by treating the oil with silicic acid or silica gel either directly, or as a solution thereof in a suitable solvent, such as hexane. Autoxidation of the purified oil is prevented by adding to the purified oil a tocopherol antioxidant,. gamma. -tocopherol being preferred. There is also added a metal scavenging agent such as ascorbyl palmitate.

An edible fish oil is disclosed which contains EPA and DHA. This oil, with significantly reduced undesirable impurities, is obtained by subjecting fish oil to vacuum steam distillation contacting the oil with an adsorbent and recovering the oil. The oil can be combined with a vegetable oil and/or Rosemary extract antioxidant to improve its oxidative stability.

A natural antioxidant for stabilizing polyunsaturated oils is disclosed. This oil-soluble antioxidant is prepared by dissolving ascorbic acid in a polar solvent, dissolving phospholipid in a non-polar solvent and then mixing the ascorbic acid solution with the phospholipid solution. After removing the solvent a product is formed which has anti-oxidant properties and is soluble in non-polar solvents.
