Abstract:

A combination convection/microwave oven in which a food product is cooked by microwave energy and by a heated airflow provided by a thermal energy source and a blower. The oven is capable of cooking food in a microwave reflective pan. Microwave energy enters the oven below the pan and is guided to a spacing between the pan and oven sides and then reflected by the sides and top of the oven to the food product in the pan. The heated airflow is laminar with an upper layer and a lower layer. The pan is positioned at about the interface of the two layers so that the upper layer is incident on the food product and the lower layer is incident on the bottom of the pan.

Abstract:

A combination convection/microwave oven in which a food product is cooked by microwave energy from a source thereof and by a heated airflow provided by a thermal energy source and a blower. The food product is located in the near field of the microwave energy. The oven includes a controller that operates the thermal energy source and/or the blower according to temperature and or time to improve cooking results. The cooking procedure includes a soak interval during which the thermal energy source, the blower and/or the microwave energy source is turned off, whereby the temperature of the food product is permitted to equilibrate and thereby provide more uniform cooking. The food product may be located directly on the rack or in a microwave transparent or reflective container.

A cooking appliance which is capable of rapidly toasting a food product disposed therein by air impingement and infrared heating to provide a cooked food product having the desired color and crunchiness about its surface. The appliance is particularly adapted for cooking sandwich products, toasting the bread and heating the sandwich filler. The appliance includes an air impingement assembly that delivers columns of heated air to the food product and an infrared heater assembly that produces infrared energy. The appliance delivers the impingement air from above the food product and the infrared energy from below. Alternatively, the appliance delivers the impingement air from above and below the food product and the infrared energy from below.

A conveyor oven in which a heated circulating air stream provides impingement air toward a conveyor, which is turned to flow horizontally along the conveyor toward an inlet and/or an outlet thereof. The conveyor oven includes a ductwork that provides a positive pressure airflow to form the impingement air as well as a positive pressure a second air flow that intersects with the horizontal air flow with a more positive pressure adjacent the inlet and/or outlet to redirect the horizontal airflow toward an air return plenum so as to substantially reduce the escape of heat to ambient.

Abstract:

An automated food processing system is provided that allows food to be dispensed, fried and packaged in a container, for example, an individual portion-sized container. The system includes separate automated modules for dispensing, frying and packaging food. An automated dispensing device dispenses a predetermined portion of food from a bulk storage container or food dispensing magazine. Food is dispensed from the automated dispensing device to an automated fry device that can include at least one circular fry wheel having a plurality of food containing compartments. After the food is fried, it is dispensed from the fry device to an automated packaging device. The automated packaging device dispenses food to a container, for example, an individual portion-sized container that is retrieved, erected and held in position for filling by an automated container handling system. After a food container is filled, a conveyor system transports the container to a pick-up location.
