  • Disposable Microwave Heating Receptacle And Method Of Using Same

    view source
  • US Patent:
    48914827, Jan 2, 1990
  • Filed:
    Jul 13, 1988
  • Appl. No.:
    7/218205
  • Inventors:
Kirk A. Jaeger - Twinsburg OH
    Yigal Peleg - Solon OH
David R. Popp - Bay Village OH
  • Assignee:
The Stouffer Corporation - Solon OH
  • International Classification:
    H05B 680
  • US Classification:
    219 1055E
  • Abstract:
There is provided an improved disposable receptacle with a self-supporting configuration for combined baking and cooking of a generally flat food article, such as pizza having a given thickness, in a microwave oven, which receptacle is constructed from a sheet of microwave susceptor stock surrounding the food article and comprising an outwardly exposed, dielectric support layer, such as paperboard, and an inwardly facing heating layer of microwave interactive material allowing passage of microwave energy as it is heated thereby and further including a lower flat portion for supporting the food article during microwave heating. The improvement in this type of disposable receptacle, which is generally a self-supporting sleeve or box, includes forming the lower flat portion of the sleeve with layer means for absorbing nearly all of the microwave energy passing from the outside of the sleeve through the lower portion so that the microwave energy at the lower portion of the sleeve surrounding the food article is converted into heat to a substantially greater extent than other portions of the sleeve. The lower portion of the food product is, thus, heated primarily by conduction, while the upper portion is heated by combined radiation from the susceptor sheet and microwave absorption through the susceptor sheet and from other extraneous heat sources.
  • Pie Crust Dough Having A Reduced Fat Content And Method Of Making

  • US Patent:
    57666644, Jun 16, 1998
  • Filed:
    Sep 28, 1992
  • Appl. No.:
    7/951992
  • Inventors:
    Yigal Peleg - Solon OH
David R. Popp - Northfield Township OH
  • Assignee:
    Nestec S.A. - Vevey
  • International Classification:
    A21D 1308
  • US Classification:
    426556
  • Abstract:
The fat content and caloric content of pie crust dough are reduced while retaining the desired characteristics of the pie crust, namely flakiness and tenderness. The amount of fat or shortening component in the dough is reduced and replaced with water. A starch component is included in the pie crust dough in an amount sufficient to avoid the development of a tough, rubbery texture.

  • US Classification:
    219 1055E
  • Abstract:
A combination of a frozen pizza of uncooked dough covered with a topping layer except for an outer sauce-free ring of dough and a microwave susceptor component enables the pizza to be cooked in a microwave oven so that the outer ring is brown and crisp. The microwave susceptor component can include one element which is either directly on or supported above the dough. The susceptor component also includes a susceptor sheet on which the pizza rests.
  • Method And Appliance For Cooking A Frozen Pot Pie With Microwave Energy

    view source
  • US Patent:
    48411124, Jun 20, 1989
  • Filed:
    Feb 1, 1988
  • Appl. No.:
    7/151199
  • Inventors:
    Yigal Peleg - Solon OH
  • Assignee:
The Stouffer Corporation - Solon OH
  • International Classification:
    H05B 680
  • US Classification:
    219 1055E
  • Abstract:
A combination of a mass produced frozen entree type foodstuff, such as a pot pie, formed from a precooked, lossy material filler food having a preselected depth and covered with a layer of uncooked dough and an appliance for transporting and reconstituting this pot pie in a microwave oven wherein the appliance comprises a dish-shaped receptacle formed of a microwave impervious foil material with a cavity for the foodstuff and a peripheral rim whereby the filler material within the cavity is shielded from direct microwave exposure except through the dough layer and a flat, self-sustaining generally rigid microwave susceptor sheet with an outer shape generally matching the preslected shape of the rim on the receptacle wherein the susceptor sheet is supported on the dough in parallel, heat conducting relationship with the upper surface of the dough and is spaced from the rim by the dough. The susceptor sheet includes a thin metallized layer of plastic film laminated to a paperboard. A method of employing this appliance in combination with the pot pie includes passing microwave energy for a preselected time through the dough layer and then into the filler material while the microwave impervious foil material shields the filler material from other microwave energy during which preselected time the filler food is heated and the dough layer is baked and, then, covering the shielded food material with the thin microwave heatable susceptor sheet and passing microwave energy through the susceptor sheet for a time necessary to brown the upper surface of the dough while allowing microwave energy to pass through the dough layer into the shielded filler material.

  • Assignee:
The Stouffer Corporation - Solon OH
  • International Classification:
    H05B 680
  • US Classification:
    219 1055E
  • Abstract:
An improved sleeve receptacle for microwave browning and crisping of a generally flat food article, such as pizza, in a microwave oven is provided. The receptacle is constructed from a sheet of microwave susceptor stock which preferably includes an outwardly exposed dielectric support layer and an inwardly facing heating layer of microwave interactive material allowing passage of microwave energy as it is heated thereby. The sleeve is initially provided as a flat sheet which can be easily fitted within the frozen food package. The consumer folds the flat sheet into its sleeve configuration by joining the top portions of the sleeve together in a manner whereby the top portions of the sleeve can be later pulled apart to permit easy removal of the heated foodstuff.
